Strawberries andRomaine Saladwith Poppy Seed Dressing
1 bunch romaine lettuce, torn 1 quart fresh strawberries, sliced or halved 1 to 2 cups mozzarella cheese, shredded
Dressing: 1 tablespoon onion, chopped 2 tablespoons cider vinegar 1/2 teaspoon dry mustard 1/2 teaspoon salt 1/3 cup sugar 1/2 cup vegetable oil 2 teaspoons poppy seeds
In a large salad bowl, combine lettuce, berries and cheese. Blend the five first dressing ingredients in a blender lightly. In a jar with tight-fitting lid, combine all the dressing ingredients; shake well. Just before serving, pour over salad; toss lightly.
Yield: 6 - 8 servings
